In La Hoja del Carrasco the Iberian pig that enjoys the freedom of living in the meadow is the main protagonist. The Montanheira is the period from the beginning of autumn to the slaughtering of the pigs in the months of January, February and March, when the pig roams freely and is exclusively fed on acorns and wild grass.

It is essential to know all the details we take into account along this process:

THEIR WEIGHT

- When the Montanheira begins the pig must weigh between 85 and 100kg so that at the end of this period it will weigh between 170 and180kg. This significant increase of weight in such a short period of time is what will provide the pig with its characteristic streaks of fat.

THEIR AGE

- The youngest age for the pig to be slaughtered is when it is around 18 months, a time which is essential for its meat to be more consistent and of better quality.

THEIR DIET

- During the Montanheira the pig can eat daily from 7 to 10kg of acorns and wild grass to put on close to 10% of what they eat.

The process before the Montanheira is very important. In La Hoja del Carrasco we carry out an exhaustive control of the animals as well as the acorns in the farms, in order to know first-hand if the amount of acorns is enough for the number of pigs which live there and if they fulfill our standards of quality. ALL THIS IS POSSIBLE BECAUSE WE ONLY WORK WITH RELIABLE STOCK-FARMERS WHO KNOW OUR REQUIREMENTS AND WHO HANDLE LIMITED PRODUCTIONS TO CONTROL AND SELECT THE BEST PIGS TO MEET OUR CRITERIA.
